Twice baked Cornish Lobster Soufflé

Terrior Picpoul de Pinet, Coteaux de Languedoc, Gerard Bertrand, 2016
One of the Languedoc’s premier producers, Monsiuer Bertrand, has gained notoriety as a master at blending e.g. the ever popular Cigalus Range! This wine is however 100% ‘Picpoul’ resulting in notes of under-ripe pineapple and minerality complementing the lobster soufflé

Ravioli of chicken & Chanterelle mushrooms, with roasting juices and shaved Wiltshire truffle

Ktima Gerovassiliou, Chardonnay, Epanomi, Greece, 2015
Greece is producing some top quality wines that may come as a surprise to some. Ktima Gerovassiliou is a meticulously-tended modern winery. Maturation in French oak produces smoky aromas, and in tasting we particularly liked the olive stone notes synonymous with the Greek terrior which matches the chicken ravioli dish

Knole Park venison; braised shoulder cottage pie, and roast leg (cooked pink), with roast root vegetables, chestnuts and bacon

Talo Malvasia Nera, San Marzano, Salento, Puglia, Italy, 2015
From the hot Mediterranean coast, this native varietal produces a lovely black pepper spice with some baked fruit notes, making it the ideal foil to the subtle Venison and rich accompaniments

Apple Tart Titan, with calvados ice cream

Late Harvest Sauvignon Blanc, Vina Echeverria, Chile, 2015
Grapes left on the vine bake in the hot Chilean sun forming Botrytis which helps create sweet notes of honey and apricot; befitting our Harvest Festival theme

Selection of British farmhouse cheese served with grapes, fruit chutney and piccalilli

(as an extra course, +£10)

Rivesaltes, Gerard Bertand, 2002
An astonishing wine with an exceptional length and a praline aromas finish

Menu and a glass of matched wines £69
